When I was reading Titan Magic: Body and Soul by Jodi Lamm (read my review here) , there is this part that I liked where one of the characters, Kaspar (a golem child who looks like a human being but doesn’t have a soul) is so keen to being normal that he becomes friends with a little girl. This is where the girl’s mother invites him to come along to harvest strawberries and bake a cake for him since it was his “birthday”. They never made a cake for him though 🙁 . This cake really caught my attention, so I decided to make one! It’s strawberry season here where I live (yes!) so it was the perfect time to make it. This is how my mind pictured Kaspar’s Strawberry Cake:
For the cake batter you will need:
- 4 eggs
- 1 cup of vegetable oil
- 1 cup of milk
- 2 tsp vanilla extract
- 3 cups of all purpose flour
- 1 1/2 tsp baking soda
- 2 tsp baking powder
- butter to spread pans
For the strawberries:
- 1 pound of strawberries
- 1/2 cup of sugar
- 2 tsp of balsamic vinegar
- the juice of 1/2 lemon
For the filling:
- 1 cup of whipping cream
- 1 package of cream cheese
- 2 tbsp of confectioners sugar
- 3 tbsp of condensed milk
The whole process is very simple to do. Here’s how:
The cake batter:
In a stand mixer, crack the eggs and set it to medium speed, then pour the oil, milk and vanilla and mix for about 5 min. Meanwhile, sift the flour with baking soda and baking powder. Add it to the egg mixture little by little on the still running mixer and leave it for another 5 min.

Grab two round 9 inch baking pans, butter and flour them, pour the cake batter evenly and bake in a 350°F preheated oven for about 30 minutes. Take them out and cool.
For the strawberries:
All you have to do is wash then and place in a bowl. Toss them around with the sugar, vinegar and lemon and let sit for 30 min at room temperature. Place in the refrigerator afterwards until you need them.

The filling:
In a stand mixer, whip the whipping cream and set aside in the refrigerator. Cream the cream cheese in the stand mixer, then add the condensed milk and the sugar until all is well incorporated. Fold the whipping cream in slowly and place in the refrigerator.

Decorating the cake:
In a plate, place one of the round cakes, spread the filling on top, add 1/3 of the strawberries (cut them in smaller pieces if you prefer), place the other bread on top, cover it with more filling, decorate it with the rest of the strawberries … and we are done!
Oh my gosh the cake looks so good it's to die for! I will try this recipe for sure, but I hope that my baking skills are enough to do this….I'm pretty sure that I'll probably burn the cake or something. #icantbake

I swear I ate half of it. It was soooo good. I love cakes and this one in particular was guilt free because it had strawberries. (Yes, that's my excuse). 😉
