Recipe: Kiwi Pie

I’ve been doing some rereading, going thru my favorites and came across with Stephanie Perkins’ books. Guess which one I got to read?… LOLA!
I love Lola and the Boy Next Door! Cricket has been my biggest book crush ever, ever. I’ve read it sooo many times that I lost count. It’s just I can’t get enough of Cricket, I simply can’t. My wish is to one day find one just like him and live happily ever after, but in the meantime I’ll just keep rereading this book…
Anyway, for some reason, kiwi pie has always popped up for me on this book, it may be because it sounded so rare. Cricket seamed to enjoy it, so I wanted to give it a shot. It may not be what it’s expected, but I found it quite pleasant and it was a hit on my family, so I wanted to share it with you! Here we go…
INGREDIENTS:
For the crust:

  • 1 stick of unsalted butter
  • 1 package of graham crackers
For the filling:
  • 3 kiwis
  • 1/2 cup of granulated sugar
  • 1 cup of water
  • 1 package of cream cheese
  • 1/4 cup of granulated sugar
  • 1/4 cup of yoghurt
  • 2 tsp of vanilla extract
  • 1 egg
  • 2 tbsp of flour
  • 1 tsp of baking powder
STEPS:
To make the crust: 
  1. In a clean surface crush the graham crackers with a rolling pin until powdery. 
  2. Then add the stick of butter and knead until well incorporated. Transfer your mixture into your baking dish and place it on the cooler to harden.
  3. Leave it there for about one hour or more.
For the filling:
  1. First of all, we are going to cook the kiwi. Wash, peel and cut the kiwi in 1/2 inch slices. In a small pot, transfer the kiwi adding 1/2 cup of sugar and the cup of water. Turn on the pot on very low heat and let it sit without moving for 30 min. That´s gonna make your kiwi/syrup. Set aside.
  2. On a stand mixer or hand mixer, cream the cream cheese and 1/4 cup of sugar until it’s soft (about 3-4 min). After that, add the rest of the ingredients one by one, leaving last your kiwi/syrup making sure you mix it well.
  3. Pour all your kiwi mixture on your previously prepared crust and bake for 30 min in  your 350°F oven. 
  4. Take it out, wait for it to cool and either leave it at room temperature or place it on the fridge to chill, your call.
  5. Now, here comes the fun part! Pour yourselves a glass of milk, grab a slice (and grab a second if you’re like us) and enjoy!

    • Yeah! I had my doubts about making this recipe because of the kiwi, but it turned out pretty good. You should try it sometime, you won't regret it! As for Cricket, just.. *sigh*. 😉
